Breakfast Burrito, don't mind if I do.


Burritos are not just for dinner. They are equally awesome for breakfast too! This one had 2 eggs, sliced sweet peppers, avocado, cheese and salsa on a toasted whole wheat soft tortilla. SOOO good! For those fixers it's a yellow, red, green, blue and a purple.

Why do kids get to eat all the good stuff like DELICIOUS peanut butter and Jelly SANDWICHES! no fair! Sometimes I find myself picking at Lila's left overs. When I do get the hankering for a PBJ, I make my own, ADULT style! I just lightly toast some whole wheat bread, spread on some natural peanut butter, slice up a strawberry or two and drizzle a tsp of honey on there! YUM!

Burrito Bowl



I could eat Mexican every day. Like no joke every day. That and SUSHI! But I like to mix it up. And this is a great and healthy way to do that! A burrito bowl! I just grilled some chicken breast and cooked up some quinoa! And layered it up, like this: Quinoa, chicken, sliced cabbage for some crunch, black beans, black olives, corn mixed with cilantro, diced tomatoes, salsa, avocado and a dollop of plain greek yogurt. YUM! Didn't even need cheese, divine just the way it was! For those fixers be sure to measure the ingredients. Mine was a yellow, blue, green, red and a tiny bit of purple for the salsa. 



Zesty Lime Shrimp and Avocado Salad with Cauliflower Rice

I have had a real hankering for shrimp lately! This dish is served cold, and I really like this kind of thing in the summer. But that doesn't mean I am going to go all fall and winter without it! So I whipped it up last night and I am so glad I did! And it went great with cauliflower rice, one of my new favorite sides! SOOO good! Check it out! 

Ingredients for Shrimp Salad;
1/4 red onion, chopped
juice of two limes
1 tbsp of EVOO
1 lb of cooked shrimp, deveined and  peeled, chopped coarsely 
1/2 large jalepeno chopped
2 plum tomatoes chopped
1 bunch of cilantro chopped
1 avocado chopped

Mix onion with juice of two limes, add EVOO and salt and pepper to taste, let sit for 5 minutes.
In another bowl mix shrimp, avocado, tomatoes, jalepeno, and cilatro. Mix in onion mixture. 

Cauliflower Rice Ingredients:
1 head of cauliflower
1/2 yellow onion
EVOO
1/2 green or red or yellow pepper. 

Take stem off of cauliflower, put florets in blender and chop for just a few seconds until fine, but not mushy. Dice onion and pepper. Saute onion and pepper in EVOO. After they are soft, add cauliflower. Sautee until soft but not too mushy, about 5 more minutes. Done! Add salt and pepper to taste.

For those fixers out there! It's 1 red, 1 1/2 green, 1 blue. And a yellow for wine of course!

Coconut Sauteed Shrimp with Cauliflower Faux Grits

Ok, so I begged my husband to let us purchase a Vitamix. Like, full on begged him. But he was hesitant because he was afraid it would end up like my juicer. Dusty and unused. Like my Nutribullet, taking up space. But I knew my Vitamix would be so much more than a BLENDER! I promised I would use it every day! And so far, I pretty much have. I am SMITTEN! Last night I made Cauliflower pretend Grits. OhEmGee. It was so good. I would say, a very close second to shrimp and grits, but ZERO guilt! 

Ingredients:
1 lb of shrimp, tail off, deveined
1 teaspoon of coconut oil 
1 red pepper, 1 yellow pepper, sliced
1 yellow onion. sliced
1 container of baby portabello mushrooms sliced
3 cloves of garlic, diced
1 lemon juiced (or lime would work too!)
1 cup of unsweetened canned coconut milk. 
1 head of Cauliflower, chopped
3/4 cup of plain greek yogurt
1/2 tablespoon of minced garlic
Pink Himalayan salt, pepper, garlic powder, onion powder.
Cilantro for garnish (optional)

Heat a large sautee pan over medium heat, add coconut oil and veggies (mushrooms, peppers and onions). Cook until soft, about 7-10 minutes. Season with salt, pepper, and a pinch of garlic and onion powder. Remove from pan. Add coconut milk, garlic and lemon juice. Bring to a boil and reduce heat to low/medium. Add shrimp. Cook until they are just pink. Remove from pan, but leave milk/sauce. Cook to thicken it. Then add back in veggies and shrimp, stir. 

Meanwhile, microwave or boil a head of cauliflower that is chopped. Add to a blender or food processor, along with some minced garlic, salt and pepper to taste, and if you are in maintenance mode or you are living on the edge, a small pat of butter. Less than a tablespoon is all you need. Blend until SUPER smooth! I used my Vitamix, at level 7 or 8, and blended it for over a minute. PERFECTION. 

If you are following the 21 day fix, add 1 green of cauliflower mixture, and 1 green of shrimp mixture, top with cilantro! This meal is so good, I would serve it to company, and I bet you they wouldn't even know it was healthy because it tastes so decadent! 

It counts as 1 green, 1 red, 1/2 blue, 1 tsp, ENJOY!!!
